Eggless White Cake
Today, I made a cake, and it turned out to be really yummy. Next time, I'll mix the batter a little longer so the cakes rise up a bit more.

The icing:


Here's the recipe:
2 1/2 cups all purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 can (300ml) sweetened condensed milk
1 cup orange juice
2 tsp. vanilla extract
1 cup melted butter
Sift together the flour, baking powder, and baking soda. Make a well in the center and add the condensed milk, orange juice, vanilla extract, and melted butter. Mix together. Bake for about 30 minutes (check the center) at 350F.
Icing:
1/2 cup softened butter
6 tbsp. shortening
1 cup white sugar
2 tsp. vanilla
1 tbsp. cornstarch
1/2 cup warm milk
Mix together the butter, shortening, sugar, and vanilla. Add the cornstarch to the warm milk, and then add this to the first mixture. Whip together for about 6 minutes. It's going to look a little weird at first, but just keep whipping it with an electric mixer.

Mehtab Singh
This is my cousin, Mehtab Singh (I named him). He's cuter in person, if you can imagine that. He's a really clean kid, always organizing his toys, and asking to have his hands washed. I like him. He's drooling in the first picture.

Yucky... a thumbnail
This was my cousin Bindu's nail. It was injured in an incident with a filing cabinet in May. This picture was from June. In June, her nail had gotten to be real gross. It was spongy. In July she had a nail that looked a little bit better, but it was only 3/4 the original length and it had a lot of ridges. Today, Bindu informed me that a new nail has come out; it looks normal, and is the same length as her original nail! Finally some good news, eh?

Footprints in the Sand
I read this a long time ago, and have thought about it often:
Footprints in the Sand
One night I dreamed I was walking along the beach with the Lord. Many scenes from my life flashed across the sky.
In each scene I noticed footprints in the sand. Sometimes there were two sets of footprints, other times there was one only.
This bothered me because I noticed that during the low periods of my life, when I was suffering from anguish, sorrow or defeat, I could see only one set of footprints, so I said to the Lord,
“You promised me Lord,
that if I followed you, you would walk with me always. But I have noticed that during the most trying periods of my life there has only been one set of footprints in the sand. Why, when I needed you most, have you not been there for me?”
